We recently had the good fortune to perform and eat at the exceptional restaurant, "Shine", in Boulder, CO. It's a gluten free restaurant that also caters to vegans, vegetarians, paleo, and other health conscious groups. I found myself saying the word divine repeatedly throughout the evening. I couldn't help it... 'divine' sums up Shine. I mean- they make potions for crying out loud. Their potions are handcrafted and mixed to encourage certain frames of mind, whether its turning over a new leaf, connecting with your inner zen, or taking over the world.
WHAT TO EAT
Jackfruit tacos- jackfruit looks an awful lot like pulled pork, and is a blank canvas for the seasonings bestowed upon it. Shine killed it with a marinade that was slightly smoky, spicy, and was paired well with a red cabbage slaw, homemade salsa and sour cream.
Cauliflower Mashers- 90% creamy, 10% toothsome morsels of cauliflower. Perfect blend of rosemary and garlic. Just as delicious as its spud cousin, but without the need to lie down and take a nap after eating too much. Win.
Coconut Shrimp- You can find coconut shrimp in a variety of places, and in a sense it's not what makes Shine unique. However, representative of everything at Shine, it is top shelf.
Shine is a restaurant that feeds the mind, body, and soul. The three women of Harpeth Rising give Shine SIX THUMBS UP.
